Olie Bollen

- 3 pack of yeast
- 1 cup warm water
- 1 cup tonic water or 7-up
- 2lbs Gold Medal all-purpose flour
- 2 packages vanilla sugar
- 1 cup raisins
In a large plastic bowl, pour lukewarm water over yeast. Gently stir until yeast dissolves. Sift flour gently throughout yeast and continue stirring by hand. Add tonic water or 7-up by little. Carefully mix in vanilla sugar. Set aside for 1 hour till mixture rises. (helps to cover and sink the bowl in some warm water) After the hour add raisins to yeast mixture (raisin can be soaked previous night in rum, not necessary)
Heat enough oil to cover the olie bollen in a deep frying pan. Use a very large spoon to scoop mixture into oil. Cook on a little less than medium heat. Make sure inside is cooked.
